I love the 1992 dresses of the Brides, I wish we got a better look at them in the movie.
I'd say that Stoker differentiates a bit between the blonde Bride and the rest, but I think he didn't do much to give them distinct personalities. He doesn't seem interested in giving his vampires much development, preferring to focus on the hunters. Still, the hints on the complex relationship they may have with Dracula are fascinating.
I'm also intrigued by the countess Dolingen we get to see in The Dracula's Guest. She may be the blonde Bride or the secret fourth bride, but either way I'd love to see her explored more in Dracula media! The very first Dracula pastiche/adaptation, Powers of Darkness, does feature her, but later on she mostly fell by the wayside.
